Behind the production of a wine there is a long and laborious field work that goes far beyond the well-known pruning and harvest phases.. A process that continues in a very demanding way once the grapes enter the winery.
It is the first activity of the plant after winter rest. When the temperature of the roots and soil exceeds 10ºC, the tears that flow through the wounds and pruning cuts appear. This moment shows the beginning of the plant's activity.
The first shoots of the vine appear with the arrival of spring.
Since the outbreak, the vine develops vegetative organs and creates other new organs: roots, yolks, grandchildren and bunches of flowers, etc.
The temperature begins to rise and the flower opens for fertilization. This stage lasts about two weeks..
It takes place throughout the summer and is that moment in which the grapes change color until they reach their final shade.. In white grapes, the color goes from green to yellowish and in red grapes, These are acquiring a pinkish hue that will gradually darken..
The development and maturation of grapes, that is to say, The formation and growth of berries originates and is a consequence of the action and triple hormonal stimulus of pollination., fertilization and seed formation, as well as the contribution of nutritional substances by the plant.
To know if the grapes are ready to be harvested, The winegrower analyzes and tastes the grapes daily to know if they reach the desired acidity and sugar values..
When the approval is given, the harvest is officially started. A very laborious process, especially in our case, which is carried out manually., where a team of collectors intervene.
Once the harvest is finished we can say that the vine enters a process of vegetative halt.. Parallel to work in the winery, In autumn the leaves of the vine begin to change color and then begin to fall. The plant begins its resting phase.
During this dormancy phase pruning is carried out, all the shoots are cleaned before the cycle begins again.
